Nicola Coughlan LOVES pickles | Dish Podcast | Waitrose

All rise… Lady Whistledown may rule the ton, but Nicola Coughlan reigns supreme in the land of pickles.

You may know her from Derry Girls, Bridgerton and Big Mood, but did you know the key to Nicola Coughlan’s heart is… her double‑door fridge? The joyous Irish actor joins us this week to talk all about the return of Big Mood. Now in its second series, Nicola’s character Maggie is back – navigating friendship, creativity and the messiness of life in the much‑loved Channel 4 show.

With a palate that aligns perfectly with Nick and Angela’s, including big flavours and properly cold champagne, it’s only right we start with a glass of Bollinger Special Cuvée Brut NV. And as any good host knows, you cook for your guest… So, in honour of our resident pickle enthusiast, Angela serves up chipotle & lime roast chicken with quick-pickled onions, bringing just the right amount of kick. On the side: smashed, roasted Jersey Royals with chilli and coriander (a recipe by @FoodwithChetna), plus a glass of No. 1 La Val Albariño to keep things fresh. And, at the ambassador’s request, a generous bounty of Ferrero Rocher to finish.

Pickles might be today’s headline act, but Nicola’s passions run deep. There’s chat about her love of kitchen gadgets (robot hoovers, plural), a soft spot for a cheap cheese toastie, and a surprisingly strong talent for organisation. Let’s just say the opticians in Galway are still reaping the benefits.
